House Blends Recipe Suggestions
NOTE: We suggest you allow 4-24 hrs. for the FLAVORS to develop. ANY of our BLENDS work in the following:

Adjusted Ketchup

Mix the following well:
1 TBSP. - ANY Hot Prospects Blend
1 cup - Ketchup

- USE as a TABLE CONDIMENT
Adjusted Nuts

Mix the following well:
1 TBSP. - ANY Hot Prospects Blend
12 oz. - Cocktail / Mixed Nuts

- WON'T WORK on Dry Roasted Nuts!!!!
Cream Cheese Spread

Mix In Food Processor:
1 TBSP. - ANY Hot Prospects Blend
8 oz. - Cream Chesse, Softened

* Delicious on Crackers or Bagels


Sour Cream Dip

Mix the following well:
2 TBSP. - ANY Hot Prospects Blend
                     OR
1 Package - ANY Hot Prospects Dip Mix
1 Cup - Sour Cream
½ - Cup Mayo
Diced Scallion or Minced Chives, optional

* Great Raw VEGIE or CHIP Dip
* Try on cooked or steamed Vegetables
* Delicious on Crackers or Bagels
Compound Butter

Mix in Food Processor:
2 TBSP. - ANY Hot Prospects Blend
8 oz. - REAL BUTTER, Softened

* Excellent on Warm Bread or Rolls
* Top Steamed Rice, Potato, or Vegie





Soups

Basic Red Chile
Heat Scale: Medium - Hot
Serves: 10 - 12

Ingredients:
      2 Pounds - Beef Sirloin or Round; Ground or Cubed
      2 Large - Yellow Onions
      5 Medium - Garlic Cloves
      1 Pack - Hot Prospects Chile Spice Blend
      1 TBSP. - Salt or Salt Substitute
      28 oz. - Crushed Tomatoes
      32 oz. - Tomato Sauce
      24 oz. - Water
      12 oz. - Beer (Optional)
      1 Pound - Black Beans, Cooked or Canned

Directions:
   Cook BEEF, ONION, and GARLIC in Large Pot (8-10 QTS). Stir frequently until Beef is evenly browned. Add entire pack of CHILI SPICE BLEND. Mix thoroughly. Add TOMATOES, SAUCE, WATER, SALT and BEER. Bring CHILI MIXTURE to a boil, then reduce the heat and allow to simmer uncovered for 1½ hours while stiring occasionally. Stir in BLACK BEANS, continue to simmer uncovered for 30 minutes.
Beef Vegetable Soup
Heat Scale: Medium - Hot
Serves: 4 - 6

Ingredients:
      1 Pack - CHIPOTLE HERBAL Mix
      1 Pound - Beef, Diced Bite Size
      4 Cups - Beef Stock
      1 Can - 12-oz Beer, your choice
      1 Can - 14-oz Diced Tomatoes
      1 Small - Onion, diced
      1 Pound - Frozen "Soup Vegetables"
      1-2 TBSP. - Olive Oil

Directions:
   Brown Floured Beef with the Onion in Olive Oil. Add remaining ingredients. Bring the mixture to a boil. Allow to simmer for 30-45 minutes. Check the Beef for tenderness. If needed, allow to simmer an additional 15 minutes. Serve with Warm Rolls and a Salad.


Bloody Mary Soup
Heat Scale: Medium - Hot
Serves: 4 - 6

Ingredients:
      1 Package - Hot Prospects Bloody Mary Mix
      48 oz. - Tomato Juice
      16 oz. - Beef or Vegetable Broth
      2 Stalks - Celery, Chopped
      ½ Pound - Beef, Diced (Optional)
      1 Cup - Barley
      Worcestershire Sauce (To Taste)
      Cooking Oil
      Anything else you think might be good
      (We add brown mushrooms)

Directions:
   Brown meat in the oil in the soup pot. Add the other ingredieents and bring to a boil, stirring to avoid scorching. Reduce heat and simmer until the barley softens. Serve with a green salad and crusty bread.
Potato Soup
Heat Scale: Mild - Medium
Serves: 4 - 6

Ingredients:
      1 pack - HERBS 'n GARLIC Mix
      6 cups - Chicken or Vegetable Stock
      2 Cans - Diced Potatoes, Drained
      1 Can - Diced Tomatoes
      ½ Pound - Ham (Optional)
      1 Medium - Onion, Diced
      1 TBSP. Olive Oil

Directions:
   Saute Onion in the Olive Oil until brown. Add stock and HERBS 'n GARLIC Mix. Bring the mixture to a boil. Add Potatoes, Tomatoes, and Ham. Allow to simmer for 30-45 minutes. Serve with a Salad and Garlic Bread.


Chicken Dishes

Southwest Chicken
Heat Scale: Medium - Hot
Serves: 4 - 6

Ingredients:
      2 TBSP - SOUTHWEST #501 Mix
      8 Cups - Chicken Stock
      1 Pound - Chicken, Diced Bite Size
      1 Can - 14 oz. Diced Tomatoes, Plain
      1 Can - 15 Oz. Black Beans, Rinsed
      4 Medium - Fresh Scallion, Diced
      1 TBSP. - Olive Oil

Directions:
   Brown Chicken in the Olive Oil. Add Stock and SOUTHWEST #501 Mix. Stir well and bring mixture to a boil. Add tomatoes and Black Beans. Allow to simmer for 30-45 minutes. Garnish with the Scallioins. Serve with Warm Tortillas or Corn Bread.
